CHILLI CARROT SALAD (for 4) December 22, 2011

Ingredients:

2 chillies (1 green, 1 red); 1 bunch of fresh mint, 500g carrots, grated; 150g almonds; 100g sultanas; juice of 1 lemon; 50ml olive oil; pinch of salt.

How to Do It:

Slice the chillies and remove the seeds, then cut them into thin strips. Roughly chop the mint. In a large bowl mix together the carrots, chillies, mint and all the remaining ingredients. Finish with a pinch of salt.
